Sort of…

I completely forgot it was Wednesday until 5pm today ! I’ve been so out of the loop lately, work has been extremely busy ! I can’t wait at the end of march when things settled down. So please excuse the lack of pictures – I shall describe my meals very thoroughly instead, deal ? Deal !

Breakfast – This will sound like a terrible breakfast, but it was good I promise. I cooked some eggs with some corn of the cobb. I know weird, but I was in a bit of a time crunch and that is all I could think of.

Snack – These crackers ! I bought them at Costco this weekend and we devoured them.

Lunch – Bean salad with some avocado, lime and cilantro ! I actually used this recipe. Angela did not fail me again ! For a quick and simple recipe, it was pretty filling. I wasn’t even hungry for an afternoon snack.

Supper – I made more of Angela’s recipes!

With some simple ingredients I made some delicious Pico de Gallo.

I then proceeded to make another one of her recipes -  Roasted Butternut Squash with Kale and Almond, Pecan Parmesan. I didn’t have any pecan or almonds so I used some toasted sesame seeds with some nutritional yeast. It did the trick !

Cooked some Butternut squash with EVOO, garlic, S&P –

Mix it with Kale and the “Parmesan” and tadaaaa!

I had to have a bit of protein, so I cooked up some Lemon Garlic Shrimps.

I also tried to juice ginger without a juicer. Never doing that again. After 45 minutes this is all the juice I got. I really need to invest in a good juicer!

It has been a longgg day, I’m now going to enjoy tea while reading some Malcolm Gladwell.

Spring Fever!

What a beautiful day ! We’ve been having really great weather recently. After 4 months of snow, ice and wind – I can official say I’m tired of winter !

Tonight’s supper was Roasted Tomato and Onion Soup ! I started by roasting some onions –

A little bit of tomatoes –

Covered with EVOO, Salt & Pepper.

After an hour at 400 degrees F – Tadaaa

I also had to roast some garlic to go with this amazing soup.

Finish product ! It doesn’t look to tasty but trust my it was delicious ! Once the veggies are roasted this soup takes literally 3 minutes.

On another note – look what I got in the mail today !! Ahh I’m so excited, I can’t wait to try out Gina’s Amazeballz & so much more ! I’ve been out of protein powder for a while now and it’s driving me crazy. Any recommendation on gluten free & vegan protein powders other than Perfect Fit and SunWarrior ?

Easy Guacamole & Salsa

This recipe could not be easier. If you have last minute guest showing up at your house and you need to entertain quickly – This is the perfect recipe for you. Or, you can even enjoy this as an afternoon snack. I’ve made many Guacamoles before but this if by far my favorite !

Plus, I have to be honest, I stole this recipe from my sister in law ! She had us over last month and made this delicious snack and just fell in love ! I’ve make it three times since. I’ve also made a salsa version because Nate refuses to eat avocados. Being a good wifey, I must adapt my recipes :P

- 1 tsp. of coconut oil

- 2 – 3 cloves of garlic

- 2 shallots

- 1 avocado

- 1 cup of cherry tomatoes

- Cilantro

1. Melt the coconut oil in a hot pan

2. Once melted, drop the garlic and shallots into the pan until golden

3. Chop the avocado, tomatoes & cilantro

4. Mix everything together and voilà!

 

Note: For the salsa, just omit the avocado. Simple, right? :)

After my little Costco trip this weekend, I had plans to make numerous healthy meals this week ! So far I succeeded ! Today’s meals were –

Breakfast – Cashews

I know what you’re going to say who eat cashews for breakfast ?! Unfortunatetely, this girls does. Breakfast has been a little bit unusual these past months. I get so nauseated in the morning if I eat. That’s never happened to me before, but I think it’s a combination of breakfast + vitamins that don’t work in the mornings. So I’ll try to find meal that can help me with that nausea ! I’m thinking omelets maybe ? We shall see.

Lunch – Sweet Stir Fry

This picture does not do this meal justice! It was so delicious !! This marvelous stir fry consisted of pineapples, spinach, onions, peppers and ground turkey !

Diner – Salmon Salad

I mixed some salmon with asparagus, tomatoes, green onions, garlic, olive oil, tamari on a bed on mixed greens! It’s quick, easy, and healthy ! Couldn’t ask for a better meal! I was in a rush tonight to get supper ready because I was babysitting my little nephew for a couple of hours. He’s just the cutest thing.

Well I’m off to relax with a cup a tea and go to bed ! Hope you all had a great day <3

Quick Three Bean Salad

Good morning :)

I have a great recipe for you guys ! This past month, I’ve been watching a lot of The Next Iron Chef and after every episode, I just felt like cooking and bringing out my inner Iron chef. So I did end up creating a couple of new recipes.

This Bean Salad is a quick, easy meal and filling meal ! There’s nothing I hate more than when you eat a meal and don’t feel full afterwards. Are you with me ?

Quick Three Bean Salad

Ingredients

- 1 can mixed beans

- 1 ½ cup of broccoli

- 1 ½ cup of cauliflower

- 3 celery sticks

- ½ of an onion

Dressing

- ¼ cup of cilantro

- 3 -4 tbsp. olive oil

- 1 tbsp. red wine vinegar

- ¼ tsp. salt

- ½ tsp. salt

- ½ tsp. cumin

- ½ tsp. garlic powder

- ½ tsp. onion powder

Directions

1. Mix all the ingredients in to a bowl

2. Blend the dressing in a separate bowl

3. Drop the dressing into the salad

4. Enjoy

Note: You can definitely change the ingredients and portion of this salad and make it your own. Throw fresh veggies you have at home, you can also change the beans for lentils if you prefer. The dressing can also be changed, those are approximate measurements. I kind of just experienced with the ingredients and didn’t really calculate the right measurements.

Winter Cauliflower Soup

Winter Cauliflower Soup

Lightly adapted from Kim’s beauty detox

4 servings

Ingredients

1 head of cauliflower

3 tbsp. miso paste

½ avocado

2 cups of water

Juice of 1 lemon

2 ½ tbsp. tamari

½ tsp. of turmeric

1 tsp. of Himalayan salt

Directions

1. Using a food processor, blend all ingredients together. I started by blending all the ingredients except the cauliflower. Once everything was blended together I added the cauliflower.
